The Perfect Pot Roast ~ Pioneer Woman style!

My personal challenge!

I am afraid of cooking RED meat!

yep!

When I was little I hated  most meat  dishes…

I always traded my meat for my sisters veggies ~

except lima beans of course!

But my mom used to make a melt in your mouth Roast ~ yum!

The one meat dish I remember enjoying as a child!

My mom passed away before I took an interest in cooking her perfect roast.

Though it is not the most important…

it is one of many things I wish I could go back in time and ask her about.

Seize the Day folks!  =)

anywho… the Roast…

Today I opened Ree’s cookbook and I followed her Perfect Pot Roast recipe!

See…

I might have added a little red wine to her recipe!  =)

The house smelled heavenly All. Day. Long.

And this baby… melted in my mouth!

It IS in fact…

The .  Perfect .  Pot Roast.

My ENTIRE family LOVED it…

Loved it!

I have picky eaters in my house!  =)

Bless You Ree!!!

and because I was still feeling like Super Woman

I whipped up this too…

I am sorry..

I am having fun with this ONE week of sinful cooking!  =)

next week it is back to spinach smoothies!  promise!

This Berry cobbler was SO quick and easy …

After putting together a fairly quick roast dish…

and a fairly quick berry cobbler…

and well…

watching the wind bend our trees nearly in half…

and watching branches fall off these big trees… yikes!

I am just saying…

they are Really close to my house…

and with strong winds like today…

SCARY!   (ok… and exciting!!)

We filled our bellies with tasty melt in your mouth pot roast …

and Berry Cobbler with Tillamook Vanilla Bean ice cream…

This chick is having fun cooking this week ~

before kids ~ I cooked  a whole lot more than I do now!

Hi Jenn, Thanks for posting these 2 great dishes! I love pot roast, but have no formal recipe. I just throw it together. I may have to get her cookbook. You sound like you really like what you have made. And according to your adorable family, its thumbs up worthy!

I used to cook a lot more when my kids were younger. Now that it is just the hubs and me at home, I don’t cook. Hubs cooks now. I always tell him that I cooked for the first 25 years of our marriage, now it’s his turn.

Pot roast AND blackberry cobbler? Help a sister out! We had left-over sloppy joes at our house tonight! 😉

ps – 1 cavity in a baby tooth and 1 root canal due to gum recession (which every dentist since then has told me was insane, but what can you do?) Can we still be friends??
